They are creating there accounts and workspaces, but are then inviting me in,
Is it possible to use my one email address across the multiple different companies?

The businesses you are working with can certainly invite you to the Guru accounts they are creating using the same email address. As their consultant, I recommend that once they invite you to their team, to assign you Admin permissions in their Settings > Users & Collections > Admins tab.
As a member of multiple Guru teams, you should be able to switch from Workspace to Workspace from the “Switch Workspace” button under the gear icon in the upper right corner of the Guru app.
